The following muffin recipe required blueberries, but I also chucked in some cranberries. It is not a sweet recipe, with honey being the only sweet ingredient and the dusting of cinnamon sugar at the end. You may (if you wish), add sugar to the recipe.
Switch oven on to 180ºC.
- 2 cups flour
- 2t baking powder
- pinch salt
- ½ t cinnamon powder
- 1 large egg
- ¾ cup milk
- 3T honey
- 3T vegetable oil
- 2 bananas mashed
- 1 cup berries
- cinnamon sugar and strawberrys for garnishing
What to do:
Sift flour, baking powder, salt and cinnamon. To this add mashed banana’s and berries. Mix lightly with fork until fruit is coated into the flour.
In another bowl, whisk eggs, milk, honey, oil.
Add liquid ingredients to the dry ones. Mix.
Spoon into cupcake tray.
Garnish with a halved strawberrys and dust some cinnamon sugar over it.
Bake for 20 mins on 180ºC.
