Tuna Pasta Salad

This is one of my favourites, and so easy to throw together.

What you need:

Cherry tomatoes
green pepper
Salad cream

Other options / ingredients include boiled egg, or different colour peppers.

As you know, I microwave my pasta. That is actually the longest part. Thereafter, set as you would like and ready to eat. Simple and perfect for lunch.

Spaghetti with Baked Beans & Sausages

Before you think, what an odd combination, it is very tasty. Try it at least once. It’s very easy and quick to make when you don’t know what to make or want to try something different.

Spaghetti, Baked Beans & Sausages

Spaghetti, Baked Beans & Sausages

What you will need

  • Koo Baked Beans
  • 300g Spaghetti
  • Sausages (about 6)

Cook as you normally would. I always prepare pasta in the microwave.

I put it into a frying pan and cover it with water and let it boil. When water dries up, sausages are ready.

Baked Beans
I add some spices to the baked beans as I don’t like the sweet taste that it has. In a pot, I heat a little oil, add chilli powder, gharam masala, jeera powder and dhania powder. I add the baked beans in and mix it for about 5 mins.

Once that all the above is done, chop the sausages and throw it in the baked beans. Mix into spaghetti.

Ready to eat.

I used to order Nachos with pieces of chicken from Spur when I was living in Durban a few years ago. I don’t recall seeing them on the menu now but I’ve made them myself.

Homemade Nachos

Homemade Nachos

What you need:

Bandito’s Nacho’s (I bought the jalapeno & cheese flavour)
Dorito’s (mild) salsa dip
Sour cream
Cheese – tussers and gouda
lemon juice
cubed chicken fillet

Cubed chicken
I braised onions in a frying pan and added spices (chilli powder, dhania & jeera) threw in the chicken cubes and sprinkled garlic flakes over it.

I mashed avo and added some lemon juice and sprinkled salt.

Using an oven proof dish, I layered the nachos with the chicken and cheese until everything fit into the dish. I baked it in the oven on 150ºC until the cheese melted.

Once that was out, I spread the salsa dip over the top and added sour cream and guacamole over it, next to each other (refer to pic).

My husband really enjoyed it!

farfalloni with feta & mushrooms

I’ve been going to Woolworths Cafe for lunch quite often in the last few weeks because their dishes are simply divine. I’ve eaten the following dish there and with the help of a friend, determined what went into it.

I just had to make it myself.

What you will need:
250g mushrooms sliced
400g farfalloni pasta
fresh thyme
Danish feta
salt and black pepper to taste
olive oil
optional fresh cream

Microwave pasta, boiled water, salt and oil for 15 minutes

On stove:
Sauté onions on medium heat in frying pan
Add mushrooms (after giving it a rinse)
Add optional fresh cream
Add fresh chopped thyme once mushroom cooks
Add a little crumbled Danish feta and mix

Drain pasta and mix the above together.
Add more crumbled Danish feta to garnish
