Homemade Pizza

This was a very lazy supper on Sunday, so I decided to make something light. A pizza sounded like the best option and throwing whatever I had in the fridge as a topping worked out quite nicely.

For the base:

  • 2 cups flour
  • 2t baking powder
  • 4T oil
  • half cup milk and half cup water – mix with 4T oil
  • salt

Make the base, roll it out and throw on whatever you feel like. Thats the best part about homemade pizza. I had some Doritos salsa from my quesadillas, which I smeared on the base. Added peri peri chicken polony (which I dont usually buy in a hurry), some sliced peppadews and feta topped with gouda. Sprinkled some thyme (I love this herb).

Baked on 180°C for 12-15 minutes.

Leftovers

It’s actually quite fun coming up with something when you have leftovers. I made extra penne arrabiata and didnt wanna eat the same thing. My husband suggested I make a “chops casserole”.
“What?”
His mum used to make it and he said it was very tasty. So I decided why not.

I added some salsa flavouring into the pasta for a slightly differnt taste. I then fried some chops in white pepper.

Using a pyrex dish, I layered some penne at the bottom, then the fried chops, then another layer of the pasta. Topped with cheese and tomato. Baked it in the oven until the cheese melted.

Leftovers

Last week I was wondering what to make because I still had some left over sausages from the day before. Its very difficult for two people to finish a tray and gets boring to eat the same thing. So I decided to make a chutney.

All I did was use half an onion, a tomato, some chilli sauce and some spices. I then added the sausages after slicing them. It took just over 5 minutes to throw together. We ate it with rolls.

Other options with left over sausages: add to spaghetti with tomato sauce or use as home made pizza topping.
