Mini Scones

I made these over the weekend, using my moms recipe. I have to admit they taste better when she makes them (of course!).

This recipe is quite a large one, I made half of it.

Full recipe before halving:

  • 4 full cups of cake flour
  • 6 tsp royal baking powder
  • ¾  t bicarb
  • ± ¾ cup sugar
  • ½ pound butter
  • 4 eggs
  • 1 cup milk
  • 2t vanilla essence + 2 t banana essence

Bake on 180ºC until golden.

Serve with jam + cream or cheese or just plain butter.

TV Snack

I was looking for a focaccia recipe a while back but didnt want to try something from the Internet – well I much prefer a recipe that one of our food bloggers have already tried. Since I didnt have one I decided to lightly toast some bread and slice it up and make a tv snack using the Nomu tomato and chill pesto I received. I choose savouries over sweet any day!

After slicing the toast up, I added the pesto and put some grated cheese and thyme and microwaved it for about 30 seconds.

It wasnt too bad – something I’d definitely make again.

Nachos

I used to order Nachos with pieces of chicken from Spur when I was living in Durban a few years ago. I don’t recall seeing them on the menu now but I’ve made them myself.

What you need:

Bandito’s Nacho’s (I bought the jalapeno & cheese flavour)
Dorito’s (mild) salsa dip
Sour cream
Cheese – tussers and gouda
Avocado
lemon juice
salt
cubed chicken fillet

Cubed chicken
I braised onions in a frying pan and added spices (chilli powder, dhania & jeera) threw in the chicken cubes and sprinkled garlic flakes over it.

Guacamole
I mashed avo and added some lemon juice and sprinkled salt.

Nachos
Using an oven proof dish, I layered the nachos with the chicken and cheese until everything fit into the dish. I baked it in the oven on 150ºC until the cheese melted.

Once that was out, I spread the salsa dip over the top and added sour cream and guacamole over it, next to each other (refer to pic).

My husband really enjoyed it!
